craveable creamed greens

healthy, creamy, fast & fresh.  these craveable creamed greens will have the kids eating their greens in no time!


let's begin with a story... once upon a time (ok, a few nights ago), hels & i were making dinner.  salad as a side i said, to which hels replied ' no! i'm craving my cheesy greens!'.  and so we took out the ingredients, cooked this recipe, and the little girl & her greens lived happily ever after.

isn't that such a sweet tale?  unfortunately there are loads of children out there who probably wouldn't touch a big bowl of greens with a ten-foot pole.  and boy are they missing out.  

greens - and by greens i'm talking about spinach, kale, chard, beet tops, collards... - are such a versatile ingredient.  these days we know them to be 'superfoods', filled with all sorts of delightful and important nutrients like vitamins a, c, k & folate, plus calcium, iron and of course fiber!  yay!  but more importantly they taste good.  and you can use them in so many ways.  saute, top with cheese (any kind will do), steam, salad, as wraps, in smoothies, juiced, baked into brownies & cakes... the list is nearly endless.

ok, now that we're all familiar with how great leafy greens are, let's move right along to this recipe.

we looove cheesy greens.  really anything smothered with cheese is a winner in our house, but greens + cheese = especially tasty.  these  greens are a take on creamed greens, and they happen to taste exactly like that classic dish, but way healthier -- traditional creamed greens have greens, yes, but also typically actual cream and/or a white sauce (butter + flour cooked, then combined with milk, 1/2 & 1/2, cream) --   and they take about 3 minutes to make. plus, they have 5 ingredients - including the spices. 

a healthy, cheesy, cravable bowl of greens?  yes, please!


recipe: craveable 'creamed' greens (serves 1, but easily increased)


  • 3 c dark leafy greens (spinach, kale, collards are especially great), washed and dried
  • 1 - 2 tbsp grated parmesan cheese
  • 1 tbsp cream cheese (we like whipped)
  • salt & pepper 
  • dash of garlic powder


  1. put greens in a microwave-safe bowl & add enough water to come up cover 1/4 of the greens
  2. microwave for 2 minutes, stir
  3. drain our 3/4 of the liquid, add salt, pepper & garlic powder
  4. microwave for 1 minute
  5. drain out any remaining liquid
  6. add the parmesan & cream cheese and stir stir stir until the cheese is fully incorporated
  7. microwave for 30 seconds
